My Monday Meal Plans have been shunted to Mid-Week Meal Plans lately – but in one way, I prefer it, as I usually know what I am having on Monday and Tuesday, but it’s the rest of the week I sometimes have issues with, and once I have been shopping at the beginning of the week I am better placed and organised to plan ahead. And, that’s just how it’s been this week…….but, it has given me to chance to create TWO fabulous new 5:2 Diet (Weight Watchers) recipes to share. One of them,Hungarian Savoury Minced Beef,I am posting today, at the end of my meal plan, the other one, Coronation Potato Salad, will be posted towards the weekend. I am finding myself being drawn more and more to comfort food recipes, as autumn deepens and the first frosts appear, and so it’s with great pleasure that I share my heartyHungarian Savoury Minced Beef, this is a real comfort meal and is low in calories,but, it is also suitable for a mid-week family supper – frugal and thrifty it may be, but it certainlydoesn’tlack in flavour. Lunch: Sandwiches with roast chicken from Sunday

Tea:Bonfire Chilli with Beef, Chocolate and Pumpkin

Lunch:Curried Scottish Carrot and Lentil Soup

Wednesday 24th:

(Fast Day for 5:2 Diet – 500 calories)

Breakfast: Low-fat yoghurt = 50 cals

Milky coffee = 50 cals

Lunch:Hungarian Savoury Minced Beef with cabbage and carrots = 242 cals

Tea: Allotment Soup = 100 cals

Thursday 25th:

Breakfast: Porridge Pancakes with Honey

Lunch: Home-made Pizza with roast vegetables and Italian sausage

Tea: Beans on Toast!

Fishy Friday 26th:

(Fast Day for 5:2 Diet – 500 calories)

Breakfast: Boiled Egg with Ryvita = 123 cals

Lunch: Coronation Potato Salad with WW Chicken Slice and Salad = 185 cals

Tea: Oven Fried Fish in a Herb Crumb- recipe to follow = 140 cals

Milk allowance 150mls = 51 cals

Total: 499 calories

Weekend:

Baking bread and treats for the biscuit tin and freezer.

Sunday: Roast Chicken and Quince Bake – Recipe to Follow

A wonderfully spiced Hungarian style savoury mince that is only 200 calories per portion. (10 Weight Watchers points, not pro-points) This comforting family meal can be served with pasta or rice when diet is not an issue, or with piles of fluffy mashed potatoes; when on a 5:2 diet fast day, serve this with steamed Savoy cabbage (100g = 24 cals) and carrots (50g = 18 cals). On the table in under an hour and full of flavour!

Ingredients

  • 350g extra-lean minced beef
  • salt and freshly ground black pepper
  • 1 teaspoon caraway seeds
  • 1 teaspoon dried oregano
  • 2 tablespoons red wine vinegar
  • 1 tablespoon tomato ketchup
  • 1/2 tin (200g) chopped tomatoes
  • 1 tablespoon smoked paprika
  • 225g onions (peeled and diced)
  • a little water

Directions

Step 1 Heat a non-stick frying pan and dry fry the minced beef for 5 minutes, or until the meat is brown and crumbly. Stir in the chopped onions and the smoked paprika and cook for a further 5 minutes.
Step 2 Add the remaining ingredients and about half a tin (tinned tomatoes) of water, mix well, cover and cook gently (simmer) stirring occasionally for 30 to 35 minutes. Season to taste before serving.
Step 3 Serve with pasta, rice or steamed seasonal vegetables.
