Due to recent health issues I am unfortunately Gluten free for life. Schnitzels were my fave go-to meal for my toddlers and I and this recipe works fantastically well! The difference with mine is that I coat the meat in gf plain flour, then soak in egg and then bread in the oat mixture. I fry them In olive oil and usually use pork or beef sizzle steak (sometimes though I’ve used this on chicken tenders and it works a treat!) the only thing that’s different to cooking with Panko (which is what I used to use) is that you can’t make them in advance and then store them in the fridge because the oats go a bit soggy after a few hours. You can freeze them though but you have to make sure you separate them with baking paper. Otherwise they are absolutely tasty and delicious!

One of the best chicken breading recipes I've cooked. I only made little changes to this. I started by using seasoning salt on the chicken first before placing it into the mixture. I also added 1/2 teaspoon of rosemary and 1 teaspoon of fresh parsley to the oat mixture. For the cooking phase, I placed the chicken on a cast iron grill pan which helped to add a little extra crunch while keeping in the moisture. Next time I plan to add a little Cajun mix over the top right before cooking.

Made and enjoyed with the following mods (I believe they would lack flavor if made exactly according to recipe): reduced breading mixture by 1/4, added granulated onion to breading, used flour and egg before breading, add grated garlic and a dash of hot sauce to egg, and placed on a cooking spray-coated rack on a cookie sheet. I almost skipped the pounding of the tenders, but I'm glad I didn't because they are so easily flattened, the cooking time was right on, and the crunch was really nice. Will make again.

I liked it somewhat. As stated in many reviews, it needs lots of added spice. I added garlic salt, pepper, and Old Bay seasoning. Also sprayed liberally with oil spray during cooking. Still, it was a bit dry and did not crisp up very much in a 450 degree oven. We used BBQ sauce for dipping. Next time, I think I would try using half oatmeal and half cornflakes or crackers in hopes of making it crispier. It was VERY filling due to the oatmeal and we all ate much less meat than we normally would, so in this way it is a very economical dish!

Easy to make and yummy. I followed recipe with cooking spray instead of egg, with skepticism, but was pleasantly surprised. I eat gluten free and used the gluten free quick oats but added extra cheese, and garlic salt. I also put the strips on a wire rack over aluminum foil to crisp underside. Yummy and soooo easy!

I could not get these to brown in the oven. Tried the low broil, but that just over cooked them and made them dry.

My husband, 3 boys, and I really liked this chicken tenders recipe. It was quick and easy. I did bake mine a bit longer than the 17 minutes....probably closer to 25; however, I didn't pound my chicken tenders out. They were thin small pieces. I did add 1/4t. garlic powder and used dried thyme instead of fresh. And, I mixed two egg whites with 1t. sesame oil to dip the tenders into first, then the oatmeal mixture. They were great! Thanks for a great recipe!

So-so. This has potential, but, really, was nothing too special. I followed the recipe, except used dried thyme (it's what I had), and added some granulated garlic (and I'm glad I did). There are MUCH better recipes on this site.

So good, I added dried parsley and garlic salt, just in case it was too plain. My bf loved it. He was kind of skeptical when he saw me preparing the "breading" with oatmeal. Now this is one of his favorites.!

This was just ok. I used buttermilk instead of cooking spray which may have had something to do with the sogginess. The taste was good, I should have used a full cup of cheese though. Overall the chicken turned out ok, but nothing special.

I was sceptical to try another breaded chicken recipe having been dissapointed with others. Soooooo glad I went ahead & tried one more time with this one! My hubby, 3 yr old, 2 yr old & I absolutely love this recipe. Went ahead & used a full cup of parmesan as we are big fans of it. GREAT flavor & an unbelievable nice crunch. Easy to prepare, too. Definitely a keeper that we will make often.

Good recipe! I added ground flax seed plus garlic powder to the mixture. I also used egg whites to dip the chicken in. To keep it crisp I took a cookie sheet lined with foil & laid a cookie rack on top sprayed with cooking spray. It helped keep the chicken from getting mushy underneath. Overall I would make this again.

We really enjoyed these! I made them exactly as the recipe specified, but it's such a versatile recipe, that you can definitely play with it! My super picky 3 year old ate these, no problem, so it is definitely a keeper for us.

My husband and I did not like this recipe. The chicken never got crispy in the oven. I tried crisping/browning them at the end by turning on a low broiler-- still nothing. I prefer the Crunchy Buttermilk-Coconut Chicken Finger MUCH more! I won't make these again.

My 9-year old friend and I really enjoyed this. It's a healthy and delicious way to eat chicken tenders and it didn't take long at all. I did not like coating the chicken in cooking spray. I will either use water or low fat milk next time.

EXCELLENT RECIPE & VERY EASY TO MAKE. I GROUND UP 1/2 CUP OF GRAPE NUTS AND ABOUT 1/4 CUP WHEAT GERM WITH THE OATMEAL TO MAKE THESE CHICKEN TENDERS EVEN MORE NUTRITIOUS! I BROUGHT OUT THE BUFFALO WING SAUCE THINKING MY HUSBAND WOULD WANT TO USE ON THE CHICKEN TENDERS. HE SAID THEY WERE TOO GOOD TO USE ANY SAUCE ON! I SERVED SLICED AVOCADO DRENCHED IN LEMON JUICE FOR OUR SALAD AND GREEN PEAS FOR OUR VEGETABLE . I WOULD DEFINITELY MAKE THESE AGAIN.

These turned out much crunchier than I expected; I also used the egg and flour process before coating in the oatmeal mixture. I will definitely make this again as it is an excellent alternative to fried chicken!

I made this with half the crumb recipe (which is plenty), and we all loved it. A little garlic salt might be good too, if you like garlic. Quick, tasty and healthy.

There was definitely too much breading. I'll use a lot less of the oats and cheese next time. And I also used the conventional way to bread using eggs and flour. But it was very, very tasty with some dijon mustard and mashed potatoes on the side.
