Even though good apples are available year-round, I always think of fall as apple season. I love to spend time in the kitchen on a crisp and chilly fall day…and the smell of apples baking in the oven is wonderful. This Honeycrisp apple cobbler recipe is adapted from my peach cobbler recipe, which bakes in an 8 x 8 square pan. I just got a new 10 inch cast iron skillet, so with adjustments to the cobbler ingredients, it worked beautifully.

Apple pie, apple crisp, apple cobbler…they are all delicious. Some are easier to make than others, and I would say that a cobbler is right in the middle. Much easier than a two crust pie, but it takes a little more effort than a crisp. The effort is definitely worth the outcome!

Honeycrisp Apple Cobbler Recipe Tips

  • If you don’t have a cast iron skillet, this cobbler can be baked in an 8 x 8 square pan, or any other oven-safe pan that’s the appropriate size. You may have to trim off some of the dough before turning the edges under.
  • It’s a personal choice whether or not you peel the apples. For this apple cobbler recipe, I peeled half of the apples, but left the peel on the other half. (3 peeled & 3 not peeled.)
  • Any kind of apples can be used. Just use whatever you like the best!
  • This cobbler can be sliced like a pie, or it can be scooped out using a large spoon. We’re not going for perfection, so if your pieces of cobbler look rustic, all the better!
  • This apple cobbler recipe is best served in bowls. When the cobbler is sliced, especially if it’s warm, the apples tend to move around.
  • I used 6 large apples, because I needed to save two apples for the photographs, but there is plenty of room to use 8 large apples. Just increase the 1/2 cup sugar to 3/4 cup.

The Cobbler Dough Recipe

This cobbler dough recipe is very basic, and can be used to make any other type of fruit cobbler. Simply substitute the apples for your favorite fruit. Some suggestions are:

  • blueberries
  • blackberries
  • raspberries
  • strawberries
  • pears
  • peaches

Another way you can use this cobbler dough recipe is to make a chicken pot pie. Just use your favorite filling recipe, and top it with this dough. A few years ago I shared a chicken pot pie recipe that’s made in small ramekins. I used puff pastry, but this cobbler dough would be delicious. See that recipe {HERE.}

Equipment

  • 10 inch cast iron skillet

Ingredients

  • 6 large Honeycrisp apples (or your favorite apples)
  • 1 tablespoon fresh lemon juice (optional)
  • 1/2 cup white sugar
  • 1/4 cup brown sugar

For the top crust

  • 1 1/2 cups all purpose flour
  • 2 tablespoons sugar
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 6 tablespoons butter
  • 3/4 cup heavy cream

Instructions

  • Peel (if desired) and slice 6 large Honeycrisp apples. Place sliced apples in a large bowl.

  • Add lemon juice and toss to mix.

  • Add the white and brown sugars. Stir to mix well.

  • Place sugared apple slices in an oiled 10 inch cast iron skillet. Set aside.

  • Preheat oven to 375 degrees F.

  • In the bowl of a stand mixer, or a large mixing bowl, add flour, baking powder, sugar, and salt. Mix or whisk to combine.

  • Thinly slice the 6 tablespoons butter. Add them to the flour mixture.

  • With the paddle attached to your mixer, on the lowest speed, blend the butter into the flour mixture. Alternately, the flour mixture and butter can be combined with a pastry blender or your clean hands.

  • Add the heavy cream, a little at a time, mixing until the dough forms and comes together.

  • If using a stand mixer, turn it up to medium speed to fully combine the dough.

  • Stop mixing as soon as the dough is formed.

  • Put the dough out onto a floured surface. (If there are crumbs on the bottom of the bowl that didn't get mixed in, just add them to dough.)

  • With floured hands, gently press the dough together and form a disc.

  • Roll the dough to make a 12 inch circle, turning the dough often so it doesn't stick.

  • Gently place the dough on the apple filled skillet.

  • Fold the edges under. Cut 4 slits in the center of the dough.

  • Place a cookie sheet, or piece of foil, in the preheated oven. Place the skillet in the oven.

  • Bake for 45 minutes.

  • Remove from oven. Serve warm or at room temperature.

Notes

Will keep, covered, in the refrigerator for 2 to 3 days.
